Greek Chickpea Snack Bowl
This summer time snack can be prepared ahead and enjoyed all week long. Packed with protein, healthy fats, and fresh vegetables and herbs, it’s the perfect snack for a hot day.
2 Tbsp Olive Oil
2 Tbsp Red Wine Vinegar
1/8 tsp salt
1/8 tsp pepper
1 can unsalted chickpeas, drained and rinsed
1 red bell pepper, sliced
1 cucumber, sliced and seeds removed
1 tomato, chopped
1/4 cup chopped kalamata olives
2 Tbsp fresh chopped dill
2 Tbsp feta (optional)
1. Combine first 4 ingredients in a large bowl and combine with a whisk.
2. Add remaining ingredients and toss to combine. Divide among 4 containers and store in the refrigerator until ready to eat. This tastes best the longer it sits!
- Feel free to swap the fresh red bell pepper for roasted bell peppers. You can always swap the tomato for smaller cherry tomatoes of different colors.
